You can take a Barodian out of the city but you can’t take Baroda out of a man.
This is what happened with Prashant Panchal, a Baroda resident from Manjalpur who moved to Hamilton, New Zealand. For us Barodians, sev usal is an integral part of the local cuisine here.
The spicy snack is a hit and Baroda is famous for joints like Jay Mahakali sev usal, and Gunjan sev usal and Lalabhai sev usal.
Prashant, missing the quintessential Barodian cuisine, tried to recreate his favourite dish, sev usal in his home in New Zealand and was successful at it. After a few trials and errors with the recipe he thought why not share this delightful snack with everyone.
Prashant now sells sev usal and misal pav from his house at 15 dollars per plate on every Monday and Tuesday. This means that Prashant earns around 60 dollars per week from making this tasty delicacy at home. His business is doing so well, he plans to expand his business in the next 8 to 9 months with the help of his friends.
